Christmas Tree Brownie’s

Here are my top two brownie recipes

Brownie No. 1 – Got this recipe from a friend and don’t know where it originated

Instructions

Ingredients

125g butter
3/4 cup good quality coco
1/2 cup plain flour
1 1/2 cups caster sugar
1 tsp vanilla extract
3 Eggs

Method

1. Heat in a medium saucepan on the stove the coco and sugar constantly stir to avoid it sticking to the saucepan
2. When the butter has melted take off the heat. If mixture is caught on the bottom transfer into a new bowl if not it’s fine to leave it in the saucepan.
3. If the two ingredients have not combined stir gently with minimal stirs.
4. Add vanilla and wait for it to cool.
5. Add eggs ad mix until incorporated
6. Add flour and mix until incorporated.
7. Poor in a tray with straight sides
8. Cook in the oven 160° FF for 25 mins
9. Check if ready, if so wait for it to cool then cut and enjoy!

Brownie 2. – This Recipe is from The Australian Women’s Weekly old Fashioned Favourites cookbook. I take no credit for this recipe

Instructions

Ingredients

30g butter
250g dark Chocolate (finely chopped)
80g butter (extra)
2tsp vanilla essense
1 cup brown sugar (firmly packed)
2 eggs
1/2 cup plain flour
1/2 cup chopped roasted hazelnuts (optional)
1/3 cup sour cream

Method

1. Grease deep 19cm square cake pan, line base with baking paper
2. Melt butter in a pan, add chocolate, stir over low heat until chocolate is melted
3. Cool for 5 mins
4. Beat extra butter, essence and sugar in a small bowl with an electric mixer until light and fluffy, beat in eggs one at a time. Transfer mixture into a large bowl.
5. Stir in sifted flour, then chocolate mixture, nuts and cream
6. Spread mixture into prepared pan, bake in moderate oven for about 45mins
7. After 45mins cool in the pan.
8. Turn brownies out from the pan, remove paper and cut.
